Gyro Bowls - Low Carb

Ingredients
Cauliflower Rice
12 oz cauliflower rice
1 Tbsp avocado oil or olive oil
Sea salt & black pepper, to taste
2 Tbsp chopped fresh dill
1 Tbsp chopped parsley
Tzatziki Sauce - Dairy Free
1 can full-fat coconut milk, refrigerated for at least 6 hours (solid part only)
3 garlic cloves
1 medium cucumber, peeled & grated (liquid squeezed out)
2 Tbsp fresh lemon juice, and Zest of 1 lemon
3 Tbsp fresh dill, chopped
1/2 tsp ground cumin
3/4 tsp sea salt and black pepper (or to taste)
Gyro Meat
1 Tbsp avocado oil or olive oil
1 medium red onion, diced
3 garlic cloves, minced
1 lb grass-fed ground beef
1/2 lb ground lamb or pork (or use all beef if preferred)
1/2 tsp ground coriander
1 tsp ground cumin
3/4 tsp dried oregano
3/4 tsp sea salt (or to taste)
1/4 tsp freshly ground black pepper
Zest of 1 lemon
2 Tbsp fresh lemon juice
2 Tbsp fresh parsley, minced
Toppings
2 cups cherry tomatoes, halved, and Kalamata olives (as desired)
2 medium cucumbers, peeled and diced
1 medium red onion, thinly sliced or chopped
Instructions
1. Make the Tzatziki
Add grated cucumber (liquid squeezed out) to a food processor.
Scoop out the solid cream from the chilled coconut milk and add it to the processor.
Add garlic, lemon zest, lemon juice, dill, cumin, salt, and pepper.
Pulse until well blended but still textured. Transfer to a container and refrigerate.
2. Prepare the Cauliflower Rice
Heat a large skillet over medium heat and add oil.
Stir in cauliflower rice, season with salt and pepper.
Cook until tender, then mix in dill and parsley. Keep warm.
3. Cook the Meat
In a large skillet over medium heat, heat oil and sauté the diced onion for 1 minute.
Add garlic and cook for another 30–40 seconds.
Increase heat to medium-high. Add ground beef and lamb/pork. Break up meat and season with spices, salt, and pepper.
Cook until browned. Stir in lemon zest, lemon juice, and parsley. Simmer briefly, then remove from heat.
4. Assemble the Bowls
Divide cauliflower rice between bowls.
Top with meat mixture, red onions, cucumbers, cherry tomatoes, and olives.
Finish with a generous dollop of tzatziki sauce.
Meal prep tip: Store components separately and reheat before serving. Tzatziki keeps in the fridge (covered) for up to 5 days.
